I actually feel the same way about tools like Canva – everything starts to look the same at some point.
That's why I'm particularly bullish on something like Webflow instead, which feels like a more modern version of Dreamweaver or Frontpage – a tool that allows for designers to build basically anything using a GUI for HTML/CSS. The Squarespaces and Wixs of the world definitely serve a purpose for some people that just need a glorified template, but then you get to what you just mentioned, everything is pretty similar ultimately.
Lastly, tangentially related: I'm also curious to witness more things be "solved" from a UI/UX standpoint. It's not worth spending a ton of time designing a blog, when Medium pretty much figured it out. Unless you're at a very high level of sophistication/need, it's not worth investing in building ecommerce from scratch – just use Shopify as the base.
